Park City, Utah – Lookout Cabin Restaurant, the award winning on-mountain dining spot at the top of the Golden Eagle and Short Cut lifts at The Canyons Resort, will be offering 3 separate wine dinners this season. During the months of January, February and March Chef Jacob Guay and his team will be producing exceptional menus specifically to be paired with unique wines.

The first event, An Evening in Piemonte, is on January 21st and will be co-sponsored by Greg Neville of Lugano Restaurant in Salt Lake City. Enjoy a 6-course meal paired with wines from the Produttori del Barbaresco winery, presented by Director Aldo Vacca of Produttori del Barbaresco. Aldo Vacca will be making his first ever trip to Utah and bringing exclusive wines with him not available anywhere else in Utah. Also on hand for the dinner will be Chris Zimmerman of Visa Imports lending his knowledge of these fine Italian wines to lucky diners.

Start the evening with a ride on the Flight of The Canyons gondola and a cozy sleigh ride through the woods to Lookout Cabin Restaurant. The singular setting and prominent wines will be the perfect match to the sophisticated menu developed by Chef Guay and Greg Neville’s team at Lugano.

The menu being offered includes:

Onion and spinach frittata with fresh Oregon white truffle fonduta paired with Langhe Arneis, Damilano 2006

“Vitello Tonnato” with shaved raw mushroom salad paired with Nebbiolo d’Alba, Produttori del Barbaresco 2004

Pheasant tortellini “in Brodo” paired with Barbaresco, Produttori del Barbaresco 2004

Polenta “Timballo”, fresh toma, braised rabbit ragout scented with cocoa and porcini paired with Barbaresco, Produttori del Barbaresco 2003

Braised cabbage roll, wild boar & chick pea torta paired with Produttori del Barbaresco, Riserva, “Rio Sordo” 2001

Chocolate “sformato”, bitter cocoa & fresh berries paired with Brachetto d’Acqui, Marecno, “Pineto” 2006

 

Returning chef and Culinary Institute of America graduate, Jacob Guay, and new general manager Dan Black, opened Lookout Cabin for the season on December 14, 2007. This is Chef Guay’s second season at Lookout Cabin under the guidance of resort executive chef Sebastian Lizarzaburu. Chef Guay’s previous experience in Park City was at the Stein Eriksen Lodge.
