With a vision in mind, the original chefs here at Red Rock set out to create an American Style menu with an Italian flare that offered a wide variety of options. As the menu grew, many traditional favorites emerged such as the Parmesan-Crusted Halibut and the French Onion Steak Sandwich. Our visitors at Red Rock have always been impressed with the culinary twist on the menu items, ranging from the wood-fired pizzas to the extensive salad and sandwich menus. Red Rock’s kitchen staff works morning and night preparing everything from scratch, making sure that your experience at Red Rock will be a delicious one. So whether you like char-broiled burgers and fries or Filet Mignon, Red Rock is sure to suit your taste buds!
Red Rock’s Salt Lake kitchen crew is headed up by chefs Eric Holmes and Rogelio Tapia, assisted by sous chef Ricardo Zamora. In our Park City location, chef Victor Durant is assisted by sous chefs Robbie Allred, Andee Hemenway and Marin Aguinaga. Alongside a dedicated staff of prep workers, line cooks, pizza cooks, the chefs here at Red Rock is constantly working on new ideas and recipes to create unique culinary specials that’ll keep you coming back for more!

The award winning brewery at Red Rock
was installed by Newlands Services Inc. out of British Columbia in 1994
by brewery consultant, Adam Rechniz. The original brewery was set up
with four 10-barrel fermenters and six 10-barrel serving tanks. Since
then, two 20-barrel fermenters, six more serving tanks and two
cold-conditioning tanks have been added. The brewery was the only
constructed addition to the original structure. 1,600 barrels were
produced in the first year of business with brewing operations mostly
headed up by Eric Dunlap, who today is a partner here at Red Rock. Along with creating and brewing a notable beer selection, brewers at Red Rock have also been kept busy brewing hand crafted sodas such as Root Beer and Cream Soda.
Over the years, Red Rock has proven itself in the brewing community bringing home many medals from the annual Great American Beer Festival and a whopping 9 from the international competition, World Beer Cup. Other outstanding accomplishments include 20 medals from the North American Beer Awards and being named “Brewpub of the Year” by Brewpub Magazine in 2000. As recently published in The New Brewer’s Annual Industry Review Issue, Red Rock
ranked 2nd in the Mountain West Region for increase in production by an
individual brewpub with well over a 50% increase in beer production
from 2004 to 2005. In 2007 Red Rock won "Large Brewpub and Large Brewpub Brewer of the Year" at the Great American Beer Festival.
With a standard selection of 8 or more brews plus sodas, the brewing team here at Red Rock is constantly on the go. Red Rock brewing is headed up by Kevin Templin, who started at Red Rock
in the summer of 2000. Of course no beer production would be possible
without an excellent brewing staff, which includes the help and
knowledge of Matt Davis, Chris Harlin and Joe Welsh. From organics to
barrel-aged brews, the brewers of Red Rock are
constantly pushing the bar to come up with new, inspiring recipes to
delight the palates of Salt Lake’s beer enthusiasts. Just goes to show
that something good is always brewing at Red Rock!
