PCARA WELCOMES THREE NEW RESTAURANTS

July 13 2015

PARK CITY, Utah (July, 2015) — The Park City Area Restaurant Association is proud to welcome three new restaurants to its organization: Cooper Moose Farm, the Park City Culinary Institute and Jafflz.

“We are thrilled to welcome not one, but three phenomenal organizations to our Association,” PCARA executive director Ginger Ries said. “Cooper Moose Farms, the Culinary Institute, and Jafflz will add to Park City’s diverse collection of offerings and our reputation as one of the foremost gourmet food destinations in the world.”

Cooper Moose Farm provides the Park City community the best organically and biodynamically grown vegetables and cut flowers in the region. Committed reconnecting people with food that can be grown in the Park City area, the farm harvests three acres of seasonal produce, herbs, and some flowers using crop rotation, cover crops, compost, organic soil amendments, biodynamic methods and in winter, a 2,400-square-foot passive solar greenhouse.

Visit the Cooper Moose farm stand at 1285 Old Ranch Road during the summer months, and sign up for its community supported agriculture, or CSA, to take full advantage of the farm’s harvests.

The Park City Culinary Institute collaborates with the area’s top chefs and restaurants to offer a distinctive culinary program that rivals some of the best culinary schools in the country.

The Park City Culinary Institute classes take place in a real commercial kitchen at Deer Valley. From day one, our students work with executive chefs with more than 20 years of experience, and field trips take the class to visit farms and artisans where they source local ingredients.

Ages range from 18 to over 60, and for those looking for jobs, raises have been as high as 17% after just two months of training.  The Institute also offers teambuilding, private dining and off-site catering.

“Park City Culinary institute was built by the top chefs in Park City and we’re excited to be building on those relationships even more with the Park City Area Restaurant Association,” said Owner, Laurie Moldawer.

Jafflz is one of Park City’s hot new hits. Led by Chef Meryl, who grew up in the beach town of Cape Town, South Africa, the café serves a dish called the jaffle, a retro South African pocket sandwich filled with sweet or savory filling, then placed in a “jaffle iron” and toasted. Choose from jafflz filed with braised short ribs, mac and cheese, Thai chicken curry, southern Indian vegan curry, Mexican chilaquiles with eggs and chorizo, apple pie and much more.

“The jaffle is the perfect vehicle for bringing a range of global gourmet cuisines to the adventurous diners here in Park City,” Chef Meryl van der Merwe said. “This is wholesome, delicious and healthy ‘fast food,’ and we’re excited to be making it a part of the Park City Area Restaurant Association.”

More than 70 restaurants are part of the association form the Park City Area Restaurant Association providing a wealth of resources to help restaurant owners and managers promote their establishments and coordinate marketing campaigns through digital, broadcast, print and social media, as well as special events.
