High West Distillery Introduces Sustainable Dinning Options

PARK CITY, UTAH (August 20, 2010) – High West Distillery is pleased to announce its partnership with High Star Farm, an organic farm located in Kamas, Utah, and Copper Moose Farm, a organic CSA (Community Supported Agriculture) supplier in Park City. High Star Farm and Copper Moose Farm will provide the distillery with year-round vegetables and herbs for the restaurant’s haut, innovative Western cuisine.
Copper Moose Farm, the only Park City-based CSA, which dedicates 2400 square feet of solar greenhouse space for wintertime growing, is in its fourth season of providing consumers and wholesalers with crops that are grown and harvested using biodynamic methods that support a balanced ecosystem. “We are thrilled to support both High Star and Copper Moose and their mission to provide sustainable and fresh produce for our patrons,” said High West Distillery’s executive chef and general manager James Dumas. “The quality of our food continues to be our highest priority, and the choice to bring farm-fresh produce into our kitchen allows us to create a very natural menu. It’s a healthy decision that benefits our whole community.”
High West Distillery is one of only six restaurants to participate in High Star Farms’ cooperative farming efforts. In Fall 2009, the partners of High Star Ranch diversified their agricultural offerings and introduced a small acre farm, where most vegetables, herbs and flowers are grown year-round in energy efficient greenhouses. High Star’s small-scale farming methods ensure that produce is grown with care for the sake of the environment and the consumer.
Supporting small local farmers is just one of the ways High West Distillery has committed to building a restaurant that is deeply rooted in the Park Citycommunity. Prior to opening the restaurant and saloon in November 2009, the historic building underwent extensive remodeling, and 80 percent of the original materials were reclaimed to conserve the Old West spirit that once existed in Park City. “It’s been my goal to source local, organic ingredients for our food and spirits since we began High West,” said High West Distillery proprietor David Perkins. “Partnering with High Star and Copper Moose Farm brings us one step closer to offering our customers more sustainable dining options and helps create a closer bond between the diner, their food and the community.”
