Vegan cuisine is not only healthy but delicious, and several of Utah's ski resorts are serving up some of the best plant-based dishes around.

Who would expect Salt Lake City to consistently rank as one of the most vegan-friendly cities in the U.S. and the world? With a young population and healthy lifestyle, Utah is home to various delicious, plant-based options, and its famed ski resorts have some of the best.

Sundance Mountain Resort has gone beyond simply removing meat and cheese from its dishes and curated a vegan-forward menu. At its Tree Room restaurant, Beet Tartare (featuring mango “yolk”) and Tempura Mushroom with rich cashew miso are meatless takes on dining favorites, and its popular Tagliatelle, Roasted Fennel and Sundance Salad are frequently prepared vegan upon request. Meanwhile, at Foundry Grill hungry diners can enjoy the restaurant’s rich Mushroom Bolognese, Jackfruit Tacos, 3 Sisters Salad or (what might be the world's most delicious) Brussel Sprouts – all vegan and delicious. Its culinary staff is as creative as it is committed to vegan dishes and tries to accommodate guest suggestions and alterations whenever possible.

If your stomach starts rumbling mid-morning at Park City Mountain, there are numerous options for vegan visitors. On the Canyons Village side, head up the Orange Bubble Express, get off mid-mountain and head to Lookout Cabin for Roasted Maitake Mushroom Ramen. Filled with tofu, radish, bok choy, Pea Shoots and dressed with chili oil, even carving carnivores will enjoy this warm and hearty soup. If you’re at the Park City town base near the Payday lift, then head to Legends Bar and Grill where its smoky Vegan BBQ Portabella Sandwich on toasted ciabatta is waiting for you.

Deer Valley Resort has numerous vegan menu options across all of its properties, and Apex Restaurant at Montage Deer Valley provides entire vegan menus for breakfast, lunch and dinner.

If you’re skiing deep powder in Big Cottonwood, Solitude Mountain Resort, has meatless, dairy-free entrees at its mountainside Honeycomb Grill. Next door, Brighton is increasing its vegetarian and plant-based options each season. Molly Greens is going greener offering a tasty Hummus Wrap and Gardenburger for hungry shredders. For those noshing late in the day – or before night skiing – with friends, try the sharable Hummus Plate, Chips Salsa & Guacamole or (butterless) Bread Sticks with Red Sauce on the side.

Over in Little Cottonwood Canyon, the chefs at Snowbird will help you refuel and send you on your way. Its popular Vegetarian Chili and Beyond Burgers are vegan and available on most of its on-mountain menus. In addition, The Summit offers Tomato Basil Soup, Vegetable Curry Stew and a large Salad Bar with dressings – all vegan. For dessert or riding-on-the-lift snack, the Power Cookie is typically dairy-free (supply chain disruptions sometimes slow the Bird’s chocolate chip delivery), but as with anything, feel free to ask. What you’ll discover across the resort is a variety of vegan options, not just one!
